2023 Theo Dancer Savagnin Jurassique Etoile, Jura, France Domaine de La Tournelle Ashton BItterFrom the village of Etoile. The wine is pressed and put directly into barrel. Once fermentation is complete it is unracked untilwinter. Then racked into stainless to settle Large used barrels, 15 days of racking before bottling. An impressive wine and a great reflection of Dancer's hand in Jura.
